Gulab Jamun & Rabdi Cake Cups

As always, we strive to make baking fun and hassle-free without sacrificing flavours that excite the tongue. This festive season, we could not miss out on combining the warm homely flavours of India best expressed through its mithais with our Mixes to make easy flavour packed fusion desserts.
One can certainly say that this is the best of both worlds! With layers of fluffy Vanilla Cake soaked in the Rabdi Cream with jewel-like mini Gulab Jamuns adding their pops of sweetness, this recipe makes a spectacular (and quick!) gourmet dessert cup amid the buzz of your festive prep!
Here's everything you need to make yours in the convenience of your kitchen,
Ingredients:
1 Plattered Real Bean Vanilla Cake Mix
¾ cup Buttermilk
½ cup Oil
80ml Heavy Cream
2-3tbsp Rabdi
15-20 Mini Gulab Jamuns
Saffron Strands (optional)
Method:
- Grease and line a wide rectangle tin. Pre-heat oven to 180°C.
- Prepare Real Bean Vanilla Cake Mix with Buttermilk and Oil as per package instructions.
- Transfer to the prepared tin and bake for about 15 mins or till golden and set aside to cool.
- To prepare the filling, whip the cold Cream till medium peaks form and gently incorporate the cold Rabdi.
- Depending on the size of your cups, slice 6-8 of the baby Gulab Jamuns into halves and set side.
- To layer the dessert, trim the cake to fit your desired cup.
- Place the cake layer, arrange the Gulab Jamun slices around the sides and place some full ones in the center. Go ahead and add as many or as little as you like :)
- Spoon the cream mixture over the Gulab Jamuns and then cover with the next cake layer.
- Finally, spread a layer of the cream and top with a small stack of the Gulab Jamuns and few saffron strands.
- Dig in immediately (if you have no patience like me) or refrigerate till consumption!
P.S. - Mix some of the Gulab Jamun chashni with milk and use it to soak the cake layers if you like your dessert sweeter and more moist.
P.S.S. - This makes two 3 inch cups, but you can use smaller cups to make more!
